Mediterranean Inspired Chickpea Salad

Serves 4
405 calories per serving


540 ml canned chickpeas, well rinsed and drained
1 large English cucumber, chopped
1 large red bell pepper, thinly sliced
1 cup grape tomatoes, halved
2 tbsp fresh oregano, chopped
2 tbsp fresh parsley, chopped
¼ red onion, thinly sliced
½ cup Kalamata olives
1 cup green olives
170 ml jar artichoke hearts, drained
¾ cup of cubed feta cheese
2 cups arugula

¼ cup Canola Harvest Canola with Olive Oil
1 tbsp red wine vinegar
1 tbsp freshly squeezed lemon juice
1 clove garlic, minced
Salt and pepper to taste


1. Combine all salad ingredients into a large bowl, minus the arugula.
2. In a smaller bowl, whisk together Canola Harvest Canola with Olive Oil, red wine vinegar, lemon juice, garlic clove. Add salt and pepper to taste.
3. Mix dressing with salad and refrigerate for a minimum of 45 minutes.
4. Mix in arugula when ready to serve.
