No Bake Summer Berry Cheesecake

Classic cheesecake topped with a bounty of delicious summer berries.

This easy-to-make, hard-to-resist No Bake Summer Berry Cheesecake combines one of our favourite flavours of summer — the bountiful crops grown and found in Canada’s berry farms such as strawberries, blueberries, raspberries, and saskatoon berries. The light, creamy texture of the cheesecake contrasts well with the crumbly graham cracker crust made with Canola Harvest Margarine and then topped with delicious summer berries creating a sweet tasty dessert especially made for picnics and sharing.

No Bake Summer Berry Cheesecake

Ingredients

Crust:
2 ½ cups graham cracker crumbs
½ cup Canola Harvest Margarine, melted
2 tbsp light brown sugar
¼ tsp kosher salt

Filling:
3x 250 gram bricks of cream cheese, softened
1 cup powdered sugar
1 tbsp freshly squeezed lemon juice
1 ½ tsp vanilla extract
1 cup heavy whipping cream

Topping:
2 cups fresh strawberries, blueberries, raspberries, and/or saskatoon berries
¼ cup sugar
1 tbsp freshly squeezed lemon juice
¼ cup water

Directions

Cheesecake:
1. In a medium sized mixing bowl, combine graham cracker crumbs, melted Canola Harvest Margarine, light brown sugar, and salt. When well mixed, press into the bottom of a 9” springform pan and about 1” up the sides.
2. Beat the softened cream cheese in a large bowl with an electric or stand mixer until smooth. Add powdered sugar, lemon juice, vanilla extract, and beat on high until mixture is smooth.
3. Slowly add heavy whipping cream to the mixture, beat on low until well mixed and adjust to a higher speed. Mix until mixture has thickened and turned fluffy.
4. Pour cream cheese mixture into prepared springform pan. Cover and refrigerate for a minimum of 8 hours.

Topping:
1. Add 2 cups berries, sugar, lemon juice and water into a low sauce pan. Stir over a medium heat, slowly mashing up larger berries with a spoon. Bring to a boil for about 5 minutes, until berries begin to break down and mixture thickens.
2. Cool for 5 minutes before pouring desired amount of berry syrup on top of each slice of cheesecake.
